Audacity is an editor and requires a bit more work. You input the stream and control it. Each channel has to be adjusted to match the main/primary input channel. Scratching? No. Audacity would be used to create the base for sampling.
DJs are using equipment with embedded programs and the computers are dedicated to audio.
